This tasty tzatziki can be whipped up in 15 minutes. When you are preparing a Greek night feast, we suggest beginning with this recipe as it is quick to make and needs to be chilled for a few hours.
1 cup plain Greek yogurt
1 tbsp freshly squeezed lemon juice
½ English cucumber, peeled, seeded and chopped
1 garlic clove, chopped
2 tbsp chives, chopped
1 tsp sea salt
Place cucumber pieces in a colander in the sink. Sprinkle with salt and let stand for 30 – 40 minutes to release water.
Combine cucumber, garlic and chives in a food processor and blend.
Add cucumber mixture to yogurt and lemon juice. Stir and refrigerate for at least one hour before serving.
Makes about 10 servings
