With fall here and winter on the horizon, there is nothing better than a bowl of homemade soup to warm the body and soul. We have gathered five harvest favourites. When making soups, one of the most crucial ingredients is the stock. You can make your own, or if you are in a pinch or don’t have time, we recommended Better Than Bouillon. It comes in a variety of flavours and is also great in gravy.
This hearty, thick soup is simple and full of flavour. Serve for a large family dinner, or freeze for a quick dinner option during the week.
1 Tbsp olive oil
2 cups diced onions
4 garlic, minced
1 Tbsp minced ginger
2 Tbsp red curry paste
4 cups vegetable broth
4 cups peeled and diced sweet potatoes
4 cups peeled and diced carrots
½ teaspoon sea salt
1/4 teaspoon cayenne pepper
Freshly ground pepper
cilantro for topping
fresh lime juice for serving
sour cream or coconut milk for serving
