- 2 cups uncooked kamut rotini
- 1 cup fresh parsley, chopped
- 2 tbsp fresh basil, chopped
- 2 1/2 tbsp balsamic vinegar
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 cup cherry or grape tomatoes, halved or quartered
- 1 cup cucumber, diced
- 1/4 cup Kalamata olives, sliced
- 1/4 cup sun dried tomatoes, diced
- 1/4 cup marinated artichoke hearts. diced
- 1/4 cup feta cheese, crumbled
- 1 cup Romaine lettuce (optional)
Instructions
- Boil a medium pot with water and add pasta.
- Reduce temperature to medium and cook, uncovered for 9 – 12 minutes.
- Strain and set pasta aside.
- Combine all other ingredients in a bowl and add pasta. Mix well and serve.
